We’ll pick you up from your hotel early in the morning and leave Santiago, heading towards Valle de Colchagua.
Our first stop takes us to Clos de Apalta; this revolutionary winery is solely dedicated to the production of Casa Lapostolle’s world-class icon wine, Clos Apalta. The winery is 100% gravity-fed, spanning five levels, three of which are buried into the granite of the Apalta hillside to provide a natural cool temperate environment for cellaring and aging. This rare vertical design allows the wine to flow naturally downward during every stage of the production, eliminating the need to pump, which can adversely affect the subtle flavors of the wine. Grapes are hand-harvested and brought to the highest level of the winery where they will be completely de-stemmed by hand, a labor-intensive technique performed by only a very few wineries throughout the world.
We then continue to Viña Neyen; this winery is the perfect blend of tradition and modernity. The Carménère and Cabernet Sauvignon vines planted in 1890 now produce excellent fruit due to their deep roots and natural balance, allowing us to reap the benefits that come with the richness and elegance of the passage of time.
They look for a unique wine that fuses the soul of this land, the valley, and the restored winery.
Finally, we arrive for lunch at Viña Viu Manent at Rayuela Restaurant, a very charming and welcoming place with a panoramic view of the hills of Apalta. Chef, Christian Adrian, mans the kitchen and offers a simple menu of grilled foods, such as meats and fish that guests combine with a variety of side dishes of their choosing. After lunch, we’ll end the day with a nice wine tasting at Viu Manent.
